Description

Spinach Artichoke Protein Pasta is a creamy, delicious meal perfect for an easy dinner or weeknight dinner. This family dinner recipe uses high protein pasta to create a satisfying and nutritious creamy spinach artichoke pasta.


Ingredients

  • 8 oz whole wheat penne pasta or any pasta variety
  • 1 tablespoon salt
  • 1 15oz can white cannellini beans drained and rinsed
  • 1 garlic clove chopped
  • ¾ cup vegetable or chicken broth divided
  • 1 tablespoon butter butter substitute or olive oil
  • 1 15oz can quartered artichokes drained
  • 1 10oz package frozen spinach thawed with excess water squeezed out
  • ¼ cup grated parmesan cheese
  • ¾ cup shredded mozzarella cheese
  • ¼ teaspoon freshly ground black pepper
  • crushed red pepper flakes

Instructions

  1. Bring a large pot of water to a boil and add salt. Cook the pasta for 11 to 13 minutes until it is tender but still firm. Drain the pasta and set it aside.
  2. While the pasta cooks, blend the cannellini beans, garlic, and half a cup of vegetable broth until smooth. Set this sauce mixture aside.
  3. Heat the butter or oil in a large skillet over medium heat. Add the artichokes and cook them until they are lightly browned, about 4 to 5 minutes.
  4. Stir in the spinach and parmesan cheese, mixing well. Then add the blended sauce, mozzarella cheese, and the remaining quarter cup of vegetable broth, combining everything thoroughly.
  5. Add the cooked pasta to the skillet and toss until all ingredients are well coated with the sauce. Season with black pepper and sprinkle extra parmesan cheese and crushed red pepper flakes before serving.

Notes

  • To reheat, warm the pasta in a skillet with some extra broth or bake in an oven-safe dish until heated through
