Description

Street Corn Pasta Salad is a creamy pasta salad that combines charred corn salad with bold spices. This easy lunch idea is perfect for a quick lunch or any gathering as a fresh and satisfying dish.


Ingredients

  • 4 ounces cream cheese at room temperature
  • 1/3 cup sour cream
  • 2 tablespoons extra virgin olive oil
  • 12 cloves garlic grated
  • 1 tablespoon chopped fresh chives
  • kosher salt and black pepper
  • 3/4 cup crumbled cotija or feta cheese
  • 1 pound short cut pasta
  • 1 head romaine lettuce shredded
  • 2 cups grilled or roasted corn 3-4 raw
  • 1/2 cup fresh basil leaves torn
  • 1/2 cup fresh cilantro chopped
  • 1/2 cup spicy cheddar cheese cubed
  • 1 avocado chopped
  • 4 tablespoons salted butter
  • 2 teaspoons smoked paprika
  • 2 tablespoons chili powder
  • 1/22 teaspoons cayenne pepper to your taste
  • 1/4 cup mayo or yogurt
  • 2 tablespoons lime juice

Instructions

  1. In a large bowl, mix together the cream cheese, sour cream, olive oil, garlic, chives, salt, pepper, and crumbled cotija or feta to create the dressing.
  2. Cook the pasta in boiling salted water until al dente, then drain and immediately toss with the dressing. Add romaine lettuce, corn, cheddar, basil, cilantro, and avocado, and mix gently.
  3. In a skillet, melt the butter until it turns golden then stir in chili powder, smoked paprika, cayenne, and a pinch of salt; cook for one more minute and then remove from heat.
  4. Combine the mayo or yogurt with lime juice and a pinch of salt to make the lime mayo.
  5. Serve the pasta salad either warm or chilled topped with the lime mayo and the spiced butter; allow to rest for flavors to meld if desired.
