- 8 oz rotini pasta
- 1 1/2 cups finely chopped romaine or iceberg lettuce
- 15.25 oz canned corn
- 1 pint cherry tomatoes halved
- 1/3 cup shredded cheese
- 1/4 cup red onion finely chopped
- 2 Tbsp cilantro finely chopped
- salt & ground black pepper to taste
- 1 lb ground beef
- ½ tsp salt
- ¼ tsp pepper
- 2 Tbsp taco seasoning
- 3 Tbsp salsa
- 2 garlic cloves minced
- 1/3 cup sour cream
- 1/3 cup taco sauce**
- 1 Tbsp taco seasoning
Instructions
- Prepare the pasta following the package directions, then rinse in cold water and set aside to cool.
- Combine sour cream and taco sauce in a bowl, stirring until smooth, and keep it ready.
- Warm a skillet over medium-high heat, add ground beef, and cook until browned, about 4-5 minutes, draining excess fat afterward.
- Season the meat with salt, pepper, taco seasoning, and garlic, stir in salsa, cook for another 1-2 minutes, then remove from heat.
- In a large bowl, mix cooked pasta, taco meat, lettuce, corn, tomatoes, cheese, onion, and cilantro.
- Pour dressing over the salad and toss well to blend all ingredients.
- Garnish with extra cilantro and crushed chips.
- Serve right away or chill before serving.
