Description

This Taco Pasta Salad is a quick lunch packed with bold taco flavors and fresh ingredients. Perfect for easy lunch ideas, it’s a cold pasta salad with taco seasoning that your family will enjoy every time.


Ingredients

  • 8 oz rotini pasta
  • 1 1/2 cups finely chopped romaine or iceberg lettuce
  • 15.25 oz canned corn
  • 1 pint cherry tomatoes halved
  • 1/3 cup shredded cheese
  • 1/4 cup red onion finely chopped
  • 2 Tbsp cilantro finely chopped
  • salt & ground black pepper to taste
  • 1 lb ground beef
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp taco seasoning
  • 3 Tbsp salsa
  • 2 garlic cloves minced
  • 1/3 cup sour cream
  • 1/3 cup taco sauce**
  • 1 Tbsp taco seasoning

Instructions

  1. Prepare the pasta following the package directions, then rinse in cold water and set aside to cool.
  2. Combine sour cream and taco sauce in a bowl, stirring until smooth, and keep it ready.
  3. Warm a skillet over medium-high heat, add ground beef, and cook until browned, about 4-5 minutes, draining excess fat afterward.
  4. Season the meat with salt, pepper, taco seasoning, and garlic, stir in salsa, cook for another 1-2 minutes, then remove from heat.
  5. In a large bowl, mix cooked pasta, taco meat, lettuce, corn, tomatoes, cheese, onion, and cilantro.
  6. Pour dressing over the salad and toss well to blend all ingredients.
  7. Garnish with extra cilantro and crushed chips.
  8. Serve right away or chill before serving.
