Description
Teriyaki Chicken Lettuce Cups are a perfect easy dinner choice for a weeknight or family dinner. This teriyaki chicken stir fry with homemade teriyaki sauce is fresh, flavorful, and ready quickly.

- 1 3/4 lbs boneless skinless chicken breasts diced into small pieces
- 2 1/2 Tbsp olive oil divided
- 1/2 cup Soy Vay Veri Veri Teriyaki Sauce and Marinade
- 2 Tbsp water
- 1 Tbsp cornstarch
- 1 Tbsp honey
- 1 cup sliced green onions divided
- 1 clove garlic minced
- 1 red bell pepper cored seeded and diced
- 1 8 oz can sliced water chestnuts chopped
- 1 cup shredded carrots 2 medium
- Romaine or iceberg lettuce leaves for serving
- 1/2 cup roughly chopped unsalted cashews
Instructions
- Warm 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat and cook the diced chicken for about 3 and a half to 4 minutes, stirring occasionally until fully cooked.
- Remove the chicken from the pan and set aside; add the remaining oil to the skillet and cook the chicken in batches if needed, repeating the process.
- While the chicken cooks, mix the teriyaki sauce, water, cornstarch, and honey in a bowl and set it aside.
- Heat the remaining half tablespoon of oil in the skillet, then add minced garlic and three-quarters cup of sliced green onions; sauté briefly for 20 seconds.
- Toss in the diced red bell pepper and chopped water chestnuts and cook for 2 minutes.
- Stir the sauce mixture again and pour it into the skillet, stirring continuously for about 1 minute to thicken the sauce.
- Return the cooked chicken to the skillet along with shredded carrots, stir to combine, and let everything warm through.
- Serve the chicken mixture over lettuce leaves and garnish with the remaining quarter cup of green onions.
